As she's basically got the physique of a child, Saria heavily relies on magical spells to take care of herself. She also takes great advantage of the nimbleness that her small size brings; she may not always be faster than her opponent, but her sharp reflexes and quick footwork allow her to hold her own against someone twice, thrice, or even four times her size. Additionally, Saria has a surprisingly strong grip and can scale almost anything, having spent hundreds of years squirreling her way around trees.
Saria can also help with the recovery of both herself and others via the use of her ocarina. By playing The Song of Healing, Saria can soothe mental anguish and hasten the recovery of physical wounds.
A moves
Deku Strike (standard A) - Attacks her opponent with a deku stick.
Triple Deku Strike (triple A) - Uses a deku stick to perform a cut-parry-thrust combo in immediate succession.
-- Deku Wheel (holding A after triple) - Spins the deku stick like a propellor to ward off incoming frontal assaults.
Fairy Bow (up + A) - Fires arrows at her opponents.
Kokiri Boomerang (left/right + A) - Flings her boomerang at her opponent to either inflict damage, steal items, or throw off balance.
Running Slide (run + A) - Drops from a running position and slides against her legs (like stealing a base in baseball; probably more useful for sliding UNDER opponents more than actually inflicting damage).

Nayru's Love (down + B) - Forms a shield of magic energy that can deflect attacks.

Thorn Root (smash up) - Summons a gigantic, thorny root that comes bursting from the ground. (Yes, in WW it's not a root, but I already used a vine elsewhere and I refuse to call this thing a tentacle.)

Song of Storms (smash down) - Plays a tune on her ocarina that brings on rain -- and a large bolt of lightning.

Overture of Sages - By playing a specific song on her ocarina, Saria can temporarily invoke the power she once had as the Sage of the Forest. This dramatically increases her magical power and makes her invincible to attacks.

As a kokiri, Saria naturally has a life-dependent tie to the forest; while she is able to leave, she only has a limited amount of time she can stay away. The longer she's out in the wide world, the more she'll gradually fall ill and lose energy. Should she stay away too long, she'll become a trophy, and be unable to revert until returning to her forest.
Though she's able to sprint well, Saria doesn't have the best physical stamina, which prevents her from breaking into a full-on run. Her physical strength, though athletic enough for someone her size, sadly isn't much of a match when compared to most other races in the wide world. This makes her ridiculously easy to overpower if she's caught, and even easier to throw.
Most devestatingly of all, the vast majority of both Saria's offense and defense is dependent on her ocarina. If this instrument were lost, stolen, or broken, Saria would be at a gigantic disadvantage in battle.

With the wisdom of untold years under her very earthy belt, Saria is a very kind and intuitive person. She listens before she speaks, and chooses her words carefully before she says them. Saria definitely believes that rewarding good behavior is preferable to punishing bad behavior, but at the same time, she is by no means a pushover. She has a protective instinct with regard to the forest and the other kokiri -- even those that have become skull kids.
Despite the fact that outsiders tend to be the leading cause of destruction to the forest, Saria can't help from feeling fascinated by them. With a seemingly unquenchable thirst for knowledge, she'll frequently set her better judgement aside to speak with intruders or venture out into the world. In an odd way, this has proved beneficial several times -- both because she'll happen to make a friend, but also because she's discovered evil more quickly and been more effective at warding it off. At the times she has made friends with outsiders, Saria becomes excitedly curious sometimes to the point of annoyance. She always seems to have a long list of questions, wants to hear endless stories, and can't keep herself from requesting artifacts from the parts of the world she can't personally visit.
Even with all of the wisdom her years of learning have bestowed upon her, in her heart Saria is still essentially the child she appears to be. She wants little more out of life than to enjoy the world around her, and will do anything to protect it from harm.

From there, the newborn Kokiri was taken by her woodland siblings into the Kokiri Village, where she was given a home and began to learn from her many peers. Though she didn't go through much physical growth, Saria's mental capacity evolved quickly, giving her a greater and deeper understanding of the world around her than most of the other Kokiri and winning her the Great Deku Tree's favor. Saria got along well with the others in the village, and actually turned out to be quite popular, but despite the unending reverence from those around her, she found great comfort in the reclusiveness of the Sacred Meadow Grove. It quickly became her "secret place", where she would indulge in research about the outside world and hone her ocarina skills.
When Link was brought to live among the Kokiri, Saria quickly befriended him, despite the fact that he for some reason lacked a fairy, and continually defended him against teasing for exactly that. When it came time for Link to leave the village, rumors began to spread he had killed the Great Deku Tree, which Saria firmly fought against. Growing disenchanted with her peers, Saria began spending more and more time in the Sacred Meadow Grove -- which allowed her an early glimpse of the evil that was infiltrating Hyrule. Determined not to let it spread to the forest, Saria quickly sent an ocarina message to Mido that help was needed, then entered the Forest Temple to attempt warding off the evil force. Unfortunately, Saria's magic was not strong enough to break the hold, and she remained trapped there until Link returned and allowed her to awaken as the Forest Sage. With her new powers, Saria aided Link and the other Sages in sealing away Ganon's evil.
Since that tumultuous time, Saria has slowly settled back into her reclusive ways, making a point to appreciate the simpler things in life after having nearly lost everything to Ganon. She continues to socialize with the other Kokiri, but only with about 50% of her time, using the rest for quiet reflection and, when she's up to it, venturing out into Hyrule for new information to obtain.

As with all Kokiri, Saria also has a fairy companion, named Lumi. I've not quite worked out the fairy's personality yet, but when I do, I'll leave a link here to the NPC app I'll write for her.
